We have so so so much zucchini in the garden right now and I know there's much more to come. I've been on the lookout for new zucchini recipes on Pinterest and yesterday I found a winner. Zucchini tots. The tots require a mini muffin pan, but we don't have one. I doubled the recipe and made them in a regular muffin pan...the result: delicious zucchini cakes. WOWZERS! Only a few ingredients and very minimal prep work. I decided at the last minute to try them and I had all of the ingredients right here (including zucchini fresh from the garden). I'll be making these again - probably this week!
