greek chicken

Christy's tzatziki recipe yielded SO MUCH (oh what a terrible problem to have!). What to do, what to do? Well, we still had feta cheese and black olives in the fridge...oh, and some roasted red peppers too! Another greek-inspired recipe seemed like the reasonable solution.

I split and dry-rubbed the chicken breasts and stuffed them with all three ingredients, sealing them shut with several toothpicks. I brushed them with egg and lightly sprinkled them with seasoned bread crumbs and cooked at 350 for 35 minutes. Removed toothpicks, topped with tzatziki and paired them with my grandmother's recipe for green beans and mashed 'taters. Mmmmm mmmmm good!
